This weekend everyone was at home to watch the Gator game. I’m so very thankful when we’re able to have Matt and Andrew home. With work and life, it doesn’t happen as often as this momma would like. So with that it meant game day food. We like to do that when we watch the away games at home. After a little bit of nail biting, the Gators fought hard and came away with the win, which makes everyone in my house happy.
Italian sub bruschetta
½ lb. boiled ham (chopped into a small dice)
¼ lb. capicola (chopped into a small dice)
¼ lb. salami (chopped into a small dice)
¼ lb. provolone (chopped into a small dice)
1 cup diced grape tomatoes
1 j16 oz. jar hot pepper rings (diced small)
¼–1/2 cup diced red onion (depending on your taste)
1 teaspoon dried oregano
¼ cup olive oil
¼ cup red wine vinegar
¼ teaspoon sugar
¼ teaspoon salt
¼ teaspoon pepper
pinch sugar
1 Italian baguette (sliced and toasted)
3 cups shredded iceberg lettuce
INSTRUCTIONS
Add all the ham, capicola, salami, provolone, tomatoes, peppers and onion to a large bowl.
Whisk the oregano, olive oil, vinegar, sugar salt and pepper in a small bowl and pour over the meat, cheese and peppers.
Mix well to combine, cover and refrigerate for at least an hour.
To serve, place the shredded lettuce on top of a piece of bread and top with sub filling. This is also good on a bed of mixed greens. Just drizzle with a little of the vinegar mixture.
Spicy Chipotle Chicken Wings
1c ketchup
1/4c honey
1/4c firmly packed brown sugar
3 canned chipotle peppers in adobo sauce
2 tsp adobo sauce from chipotle peppers
5 tbl apple cider vinegar
2 tbl Worcestershire sauce
1 tsp black pepper, divided
1/2 tsp ground cumin
6 lbs whole chicken wings
3 tbl vegetable oil
1 tsp salt
Instructions
In the container of a blender, combine ketchup, honey, brown sugar, chipotle peppers, adobo sauce, apple cider vinegar, Worcestershire sauce, 1/2 tsp black pepper, and cumin; process until smooth. Reserve 3/4 cup sauce ; cover and refrigerate.
Put chicken in zip lock bag and place chicken in bag. Seal it and let it marinate for a couple hours. Spray grill rack with nonstick cooking spray. Preheat grill to medium-high heat. Grill wings for 5 to 6 minutes per side or until wings are done, brushing with remaining sauce while grilling.
Garlic Parmesan Chicken Wings (these are our favorite)
3 quarts water
1/3c balsamic vinegar
1/4c salt
1 bay leaf
1 tsp dried thyme
1 tsp dried oregano
1 tsp dried rosemary
8 cloves garlic
1 pinch salt
3 tbs olive oil, more if needed
1 tbs ground pepper
2 tsp crushed red pepper flakes
4 lbs chicken wings
2 tbs fine bread crumbs
1c finely grated Parmigiana cheese, divided
Instructions
- Preheat oven to 450 degrees. Line a baking sheet with aluminum foil and coat with cooking spray
- Combine water, vinegar, 1/4c salt, bay leaf, thyme, oregano, and rosemary in a large stock pot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for at least 15 minutes.
- Mash garlic and a pinch of salt until smooth.
- Combine mashed garlic, olive oil, black pepper, red pepper flakes, in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2c cheese. Transfer to prepared baking sheet and sprinkle with remaining cheese.
- Bake 20 to 25 minutes.
Teriyaki Chicken Wings
1c water
1c soy sauce
1c vinegar
1/4c pineapple juice
1/4c vegetable oil
1 tbs minced fresh garlic
1 tbs minced fresh ginger
3lbs chicken wings
Instructions - Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic and ginger in a large glass bowl until the sugar has dissolved. Add chicken wings, coat with marinade, cover the bowl with plastic wrap, and marinade in the refrigerator for at least one hour.
- Preheat an oven to 350 degrees. Spray baking sheet with cooking spray.
- Remove chicken wings from the marinade and place on prepared baking sheet. Discard the remaining marinade. Bake the wings until cooked through and the glaze is evenly browned, about 1 hour. We also cook these on the grill. Same as the others about 7 minutes on each side.
